










My childhood, in fact, was marked by the harvest seasons. June, was the gold-colored harvest ingess; September, the harvest with the scent of must; November the harvesting and milling of olives with evo oil, our gold that flowed scented and flooded the air. That’s why I framed my jurisprudence degree parchment and embarked on this wonderful adventure in the world of agriculture. The name of my company is L’Avvocato-Agrifood and is evocative of my studies. My company is located in Orta Nova (FG) in the “Basso Tavoliere” of Puglia.

The excellence of Our Evo oil is the result of a work done in synergy between nature and man. Nature has given us a microclimate and a soil conducive to the cultivation of olive trees with the production of olives such as the Coratina cultivar and the Peranzana cultivar, which allow us to obtain a very valuable evo oil. Man then added experience and love to create a product of excellent quality. The olives are harvested by hand or with the help of selected downchers and processed according to the classic method of cold squeezing within six hours of the harvest itself. The fruits, in fact, are crushed with stone molas to obtain a homogeneous paste, which is then processed in state-of-the-art continuous plants that ensure maximum hygiene and authenticity.

CULTIVAR CORATINA AND CULTIVAR PERANZANA
The Coratina comes from Corato. The most obvious qualities of evo oils – made from 100% Coratina olives- are certainly fruity, spicy and bitter hints. The bitterness is often mistakenly perceived as negative attributes of the evo oil, however the Coratine evo oil is an excellent quality. The evo oils, which are obtained by 100% Coratina olives, have the highest content in polyphenols (often 300% compared to other varieties) and the highest rate of oleic acid that helps to prevent cardiovascular disease by freeing arteries from the so-called “bad cholesterol”.
The Peranzana variety is typical of the northwest area of the province of Foggia. The evo oils, which are made by Peranzana olives, have hints of almonds, dried fruits, artichokes and tomatoes. The taste is slightly bitter and pleasantly spicy. The evo oil that is obtained has low acidity and a balanced taste.
BITTERNESS AND SPICINESS
Bitterness and spiciness are not defect of the evo oil at all, but it denotes a very high concentration of polyphenols, extremely powerful antioxidants that delay cellular aging, prevent tumours, arteriosclerosis and other diseases. Polyphenols have beneficial effects on people, as well as for the evo oil itself; indeed, the number of polyphenols is crucial for the life of the evo oil because it helps its preservation. It protects from the action of peroxides; therefore, a higher number of polyphenols means for consumers greater protection against so many diseases and a longer “life” for evo oil.
FDA: Extra Virgin Olive Oil is a nutraceutical
The U.S. Food and Drug-Administration stated that extra virgin olive oil is a nutraceutical, a drug food that has beneficial active substances for the body. The maximum recognition you can give to a food.
